The 33-year-old striker netted 16 goals and laid on two assists in 34 appearances as Espanyol were relegated to the second tier of Spanish football.
The striker is currently national team duty with Spain, who will face Croatia in the UEFA Nations League final on Sunday night.
Joselu will become Los Blancos' third signing following the arrivals of Fran Garcia and Bellingham.
